On February 22, 2025, Eagle Bluff Environmental Learning Center, in partnership with Juniper’s Restaurant, hosted the latest installment of the 21st Annual Dinner & Brunch on the Bluff series, featuring an insightful discussion on regenerative farming in the Driftless Region with Dayna Burtness, co-owner of Nettle Valley Farm.
An Evening of Thoughtful Discussion & Delicious Dining
The evening began with a welcoming reception where guests mingled over drinks and appetizers, setting the stage for a night of engaging conversation. A beautifully curated four-course meal by the talented chefs at Juniper’s followed, highlighting locally sourced ingredients that reflected the spirit of sustainable agriculture.



As the dinner progressed, Dayna Burtness took the stage to share her journey into regenerative farming and the lessons learned along the way. Though she didn’t grow up farming, she has become the sixth generation to live and farm in Houston County, MN. Guests gained insights into how agroforestry and pastured livestock systems contribute to soil health, biodiversity, and long-term economic sustainability.
With humor and honesty, Dayna shared the challenges and triumphs of running a farm, balancing financial sustainability with environmental responsibility, and how she and her partner, Nick, work together—Nick managing the critical but often unseen roles like bookkeeping and financial planning while also becoming an expert livestock wrangler.

A Conversation that Resonated
Following the presentation, a lively Q&A session allowed guests to dive deeper into the topic, asking about everything from policy implications for regenerative farming to practical ways consumers can support sustainable food systems. The conversation underscored the importance of building resilient local food networks and the role that education and awareness play in shaping the future of agriculture.

The Dinner & Brunch on the Bluff series continues to be a cornerstone event for Eagle Bluff, offering an immersive experience that blends education, community, and exceptional cuisine.
